Japanese: Tofu Dogu, ca. 1965-1980 Tofu maker
built by Miyauchi family and served to remove water from coagulated
soymilk. A perforated board is inserted into the bottom of the box,
covered by a close weave cloth. Soymilk is, thereafter, poured into
the box and a wooden cover floated atop. The weight of the cover presses
the water out of the milk through an opening in the bottom of the device.
Under pressure, tofu is the remnant of the milk left remaining on the
cloth. Donated by Nikkei Cultural Society |
